Jerome gambit just wins on the spot.
I m bad at attacking but that's not the only reason I am looking at this video I wanna be able to defend too. So I know when opponent is making a poor attack or when opponent has an attack or can create attacks. The usual thing that happens in my game is we both create our attack and IDK how tf victory is determined.

#7 you missed first it's white's move, and if it was black's move, then kn takes pawn!
There's only gambit I play is Viena, because if black accepts it, it (similarly to the Danish gambit) gives a huge lead in development for white, and if black doesn't want its pieces on the backrank, they have to give this pawn back to you.

"greek gift"? It is not your fault but the english chess literature. Someone translated "dono Greco", relatively to Gioacchino Greco, who wrote the anaysis of the bishop sacrifice in h7 in his chess treatise โTrattato del gioco degli scacchi" (1619), into "greek gift". Please, have a look at the english edition "The Royall Game of Chesse-play".

It seemed slightly ironic that the game example for attacking 13:33 (Greek Gift) was typical of (Jobava) London System; then, on the next point, #11, London System is the cited example of a passive opening (system).
First video of yours I see in my feed after subscribing. I agree with everyone that this is the best learning channel at least for my meager sub 1000 ELO but I suspect for all.
